Vicki Delany’s Chocolate Chip Cookies

As Served for the Children’s Tea at Tea by the Sea Tea Room

Chocolate chip cookies are not usually an afternoon tea delicacy. Afternoon tea sweets usually tend to be more delicate: fruit tarts, macarons, shortbread, small cakes or mini-cupcakes. But in the Tea by the Tea tea room, as featured in Vicki Delany’s new book, Tea and Treachery, they serve a children’s tea.  Lily Roberts, owner and baker, has found that these cookies are very popular with her younger guests. More recipes for traditional tea room fare can be found in the book.

Vicki Delany’s Chocolate Chip Cookies

1 cup butter, room temp

½ cup sugar

1 cup brown sugar

Combine and mix until fluffy

2 eggs

2 tsp vanilla

Add to above and beat until smooth

2 cups flour

1 tsp baking soda

1 tsp salt

Mix in separate bowl then slowly add to wet mixture until combined

1 cup chocolate chips

            Gently add to mixture

Drop on greased cookie sheets and bake at 375 for 8 – 10 minutes.
